Easy Side Dish Recipe: Baked Vegetables

I think it’s not about the most fancy dinner that comes in your mind while standing in your local supermarket but a healthy and nutritious recipe at all. Sometimes I really don’t know what I want to cook and eat at all (besides from nachos with cheese, my all time favorite), so I really like to browse my phone, Pinterest board or our blog to get inspired. This easy side dish recipe is healthy and delicious and you don’t need that many ingredients and can mix it up from time to time.

All you have to do is to chop some vegetables you would like to eat. Courgette and broccoli are always a safe option, but I also like to add some paprika, tomatoes or onions for some spicy flavor. Add some herbs: oregano, paprika, salt and pepper are always a good idea. Then drizzle some good olive oil on top of it and blend your mix of veggies. Put it in the oven for around 30 minutes at 180 degrees and it’s good to go. I really love to cook some homemade falafel and enjoy this vegan dish.
